You do not need a company to issue an invoice. An invoice from a self-employed person registered for economic activity is just as valid a supporting document as one from a limited company — only a few details differ.

VAT usually does not apply

Most self-employed people are not VAT-registered, so VAT is not shown at all — which is not the same as "VAT 0%". Registration becomes mandatory once taxable turnover exceeds €50,000 over 12 months. See invoice without VAT.
